Aaron’s Highwater Espresso Rub
Ingredients: Aleppo chile flakes, espresso powder, black pepper, brown sugar, smoked paprika, mustard powder, ancho chile and cocoa nibs.
Uses: As a dry rub on steak, pork tenderloin or chicken thighs adding a warm, rich, strong and “deep” flavors that excite the whole mouth. Tom’s favorite on flat-iron steak!
* This rub is named after Aaron, a former student at the Tongue Point Culinary Program here in Astoria and a coffee blend from Columbia River Coffee Roaster one of Astoria
